In this article we shall discuss about requirement of FSSAI licence for a bakery business. In this article we are targeting small bakery with production capacity of from 50 kg to few 1000 kgs per days. Depending upon your production and nature of business you can choose appropriate type of FSSAI licence.
Types of FSSAI licence
- FSSAI registration
- FSSAI state licence
- FSSAI central licence.
FSSAI Registration
If your bakery is small and your turnover is less than 12 lakhs per year. The total per day production should be less than 100 kg. You can go with FSSAI registration. FSSAI registration is free and can be done online. There is no obligation to file a return for FSSAI registration. So if your bakery is small and your sale is less than 12 lakhs per year, you can go for FSSAI registration.
Example of small bakery: like you have 16 tray rotary rack oven and you produce 50 to 70 KG Rusk every day. and your monthly sale is below 1 lakhs. You can go for FSSAI registraion. Note: This is just an example situation, may in in your case you need FSSAI licence with 16 tray oven
FSSAI State licence
Most of small bakery fall in this category. If your production is more than 100 kg per Day or your turnover is more than 12 lakhs per year. FSSAI state licence is most appropriate type for you. You shall also have to file FSSAI returns once you have obtained FSSAI state licence.
Example: If you are using any size of rotary rack oven, you fall in this category, because except 16 tray rotary rack oven your production capacity would easily exceed 12 lakhs per year or 100 kg per day.
FSSAI Central licence
This category is for very large production and is out of scope of our writing. However if you are 100% export based bakery, you must obtain Central licence. Holders of central FSSAI Licence also require to fill FSSAI return.
